Empanadas are meat pies that are common in many South American and Hispanic countries. There are probably as many empanada recipes as there are families that make them. Though the filling ingredients vary, most consist of a meat mixture encased in a pastry shell, much like pie crust. So if you can't find the "Empanada Shells" in the frozen food section of your favorite super market, you can use pie crust or make your own dough.

| 2 | Hard Boiled Egg (chopped) | |
| 1 | Onion (Diced) | |
| 1⁄2 | Teaspoon | salt |
| 1⁄4 | Teaspoon | ground cumin |
| 1⁄4 | Teaspoon | black pepper |
| 1 | Package | Empanada Discs (Thawed) |
| 2 | Ounce | Olives (chopped) |
Allow Empanada Discs to thaw overnight in refrigerator. Saute onion and Ground beef. Drain fat. Let stand 15 minutes to cool. Remove Empanada discs from refrigerator at this time. Add hard boiled eggs, salt, pepper olives,and cumin.Mix ingredients. Add one heaping Tablespoon of mix to center of Empanada Disc. Wet finger and run around half of Empanada disc. Fold in half and press to seal around the edge. Additional sealing can be done with a fork or by folding with finger to form a scalloped appearance. Fry in 350 degree oil for around 2 minutes per side. Remove from oil and let drain on paper towels. Serve while still warm.
